The smooth pairing of a Mont d’Or served hot with the RSRV 4.5 vintage

This AOC cheese, which is very popular especially during the winter period, has found a great ally: RSRV Cuvée 4.5 champagne.
The tasting begins with a frank and sustained attack on the palate of this brut cuvée, just like that of the Mont d’or. In a second phase, the lively and fruity notes of RSRV cuvée 4.5 bring a little freshness to the richness of the cheese. The new potatoes accompany the Mont d’or while reinforcing the roundness of the pairing.
Dig a hole about 2 cm in diameter in the Mont d’Or and pour in a little dry white wine. Place the cheese in the oven at 180-200°C (gas mark 6-7) until melted, about 30 minutes. Serve hot with the cooked potatoes.
