Double saline expression: that of the fish and that of the tapenade to intensify the fruity aroma, red fruits, cherry and almond of the RSRV rosé Foujita cuvée. The delicate bitters of the champagne stretch the substance of the red mullet, and the perception of salinity animates the mouth during long caudalies. The agreement would almost give the impression of a sweet/salty, bringing out the pastry and gourmet notes of the champagne.

  • 6 small red mullet, scaled
  • 25 g butter
  • Flour
  • 100 g black tapenade
  • Olive oil
  • Salt and pepper
PrEparation



1.
Coat the red mullet fillets in a little flour then brown them in a hot frying pan with the butter.

Arrange the fillets on a plate with a spoonful of tapenade.

3.
Serve on a bed of homemade mashed potatoes.
