Generally enjoyed with lively, citrusy wines, the pairing proposed here plays with the complex, harmonious and gourmet notes of the RSRV Cuvée 4.5 champagne. The firm flesh of the cod benefits from the roundness of the wine and creates a sensation of amplitude in the mouth.;


The citrus fruits and pomegranate seeds present in the preparation unite with the aromas of yellow fruits and sweet spices of the RSRV 4.5 vintage. These finely spicy notes that echo the Timut berries and coriander of the preparation also offer a beautiful length in the mouth.

IngrEdients

For 6 people

  • 800g fresh cod back
  • 2 oranges
  • 2 limes
  • 1 pomegranate
  • 1 red onion
  • 1 bunch of coriander
  • Olive oil
  • 1 teaspoon of Timut berry
  • 1 teaspoon of powdered ginger
  • Salt
PrEparation

1.
Remove the citrus zest. Squeeze an orange and a lime. From the remaining orange and lemon, remove the segments without the membranes.

Thinly slice the red onion. Roughly chop the Timut berries.

Pour the citrus juice into a dish, add the onion, Timut berries and powdered ginger, a pinch of salt. Mix.. to marinate in a cool place for about 1 hour.

4.
Remove the pomegranate seeds. Serve on a platter with a little marinade juice, olive oil, pomegranate seeds and coriander leaves.
