The influence of Pinot Noir in the production of the RSRV Blanc de Noirs cuvée
The RSRV Blanc de Noirs vintage has the particularity of requiring a minimum of 6 years of aging. This longer aging requires starting with a fresh and fruity base to meet the aromatic profile sought by the House.
This is why, to obtain these characteristics, Blanc de Noirs is exclusively made from juice from the Verzenay terroir. The essence of Blanc de Noirs lies in the rigorous selection of plots. The aim is to find the essential characteristics of Pinot Noir on the Verzenay terroir, a terroir renowned for the quality of this grape variety.
Of all the musts obtained from these plots, only those that meet the desired style will be selected. They are then kept in vats, each vat having its own organoleptic signature. Of these vats, only a few – most of the time just one – are selected on the basis of their potential to carry out a blending project.
